In the modern games you basically have full access to all spells and skills and there's not much stopping you from using whatever combinations you want
In 2, because of the skill point system, your build is a much more deliberate choice, and you tend to build around 1-2 spells + synergies.
2 also has a really timeless art design. 3 will ALWAYS look stupid and cartoony.
