Because the idea of a female knight is laughable in itself, as they would only manage to get raped.
This of course doesn't happen in vidya, but it's only logical that their role is mostly to be eye-candy for the player, and it's silly to expect them to be anything more than that.

If she's taking up arms in defense of weaker women and children, she's following the spirit of the code.
