In the anime, card artists are unconsciously influenced by Duel Spirits, which in turn were originally the souls from Earth.
As for specific mechanics, whoever owned the rights to Duel Monsters thought it would be neat to introduce the new mechanic. I believe the only exceptions to this were 5Ds and Go Rush because the protagonists invented them, but in both cases, Declan and the Goha corporation ran with it.

If you're interested in the manga: DM, GX, and 5Ds all retain the Egyptian rituals.

Anon, it has been 25 years since the game's creation, you can't expect the series to remain stuck in Egypt forever, and this stopped being the case since GX. Adding to that, we haven't had a "mainline" anime for years, the current one is Go Rush with is a simplified version of YGO aimed at kids, nowadays Konami is focusing more on telling the card stories through their most recent series of animations:

The game itself had nothing to do with Ancient Egypt, even in-universe. The duel spirits came from an alternate dimension.
Ancient Egyptians were just among the first (the first being from Atlantis iirc) to summon them to our world to beat the shit out of each other for our entertainment.
Pegasus uncovered all this and turned it into a new card game, but once he'd ported all the old Egyptian shit to the modern age he started designing new cards too. There's no reason why it would continue having an Egyptian aesthetic after that.

I bet I'd say Tag Force if I played at least one of them seriously though.
I used to boot them up once in a blue moon, play a duel or two and then drop it because every single time I tried to get into them I wasn't that much into YGO anymore, but now that I started to read the manga and playing some of the older games, maybe things would click now.
