I've never played a "Souls" game before. Would Lies Of P on my Steam Deck be a good place to start?

It's good. It's actually better than most souls-like games. They added an easy mode, if you want to play through and try it out and then bump the difficulty up.
Good weapons
Good upgrade system
Good bosses - although I personally some of the mini bosses are harder then some of the actual bosses.
Good theme
Good atmosphere
It is a good solid game
