Yep, that was my first reaction but the games colors are pretty beautiful. The graphics themselves can only be so good in a game where you go super fast.

Forgive me if this has been brought up before, but this video is really neat! Goes into how since Kirby Air Ride had a lot of ideas on the cutting room floor despite most of it's assets being there early on, so it's a little interesting that there's 2 points in the original game where the game has mysterious creatures with 3 eyes

And it's especially interesting that this game that looks to be "what if Air Ride was polished and finished" could possibly have a story, brings back one of the 3 eyed creatures from the original, and then has a new basic enemy with 3 eyes as well, replacing an Air Ride original enemy. The fact Sakurai has been strong armed into adding a lot of post-SNES characters already, I think 64 bros can still be happy that there's a small chance they're added. I feel like someone at nintendo saw what direction the wind was blowing and considered that Sakurai has a history of having way better direction for games. He's very consistent with putting game design above everything else and not buying into whatever's currently the hype.
Even as far back as Brawl he made fun of realistic piss filter games with the Mushroomy Kingdom level, so it's kind of par for the course for him to not make Air Riders open-world and even to make light jabs at MKW for having too many players.

Mario Kart's use of NPC can vary from Cow where they're actually posed to be raising properly to Sidestepper which looks like they just plopped the model onto the kart and called it a day.
