I've done martial arts and no other game comes closer to what it actually *feels* like (mechanically) to fight somebody IRL

Have you just trained, or have you actually been jumped by multiple people?
I did MMA before it was cool for 15 years and the 2 fights I've been in where multiple people v 1.
Fights are never 1 on 1.
Think of a sluggish crappy game where you can't do anything but run, and you'll have what you're looking for.
All you can really do is defend yourself and survive in a real fight.
I would compare it to Resident Evil 4 with the 'can't move and shoot at the same time' feeling.
If you think a real fight is anything like training in the gym, LMAO.
I even trained "multiple attackers" scenarios and you're an idiot if you think there won't be 2 grown men jumping on your back and grabbing your legs in a real fight.
I at least bashed someone's teeth out at the start of a fight, but after that they all just pile on top of you.

So yeah, think of a sluggish slow game like when you're in a dream and can't throw a punch. That's what it's like. I'd say RE4 (original on gamecube) is close. Or any clunky tank-controls game where movement sucks.

you can feint attacks, delay or accelerate
you can dodge swings by looking in different directions (your POV essencially controls your torso)
if both of you cant hit eachother, it turns into stamina management

You went to the scenario in your head where you get jumped by multiple attackers.
I'm talking about the flow of 1v1 combat. That it's more like a dance, there is a rhythm to it on top of deciding the correct way to attack / block / dodge. It's very close to boxing.

most fighting games devolve into button mashing
that has nothing to do with the tactical approach of fighting where you have to carefully consider every move you make (it's automatic since you practice, so it's fast, but it's not just chaotic kicking and punching without direction, you'd get dismantled in a second, probably even hurt yourself)
