When I haven't played a game in years and so many new additions or even reworks happen, so even the build I used to play years ago may not even be functional in todays patch. In cases like that where I have no frame of reference for what works and what doesn't, I use a guide if the game's difficulty warrants it like Path of Exile.
With that said, I completely agree with your sentiment, creating your own autistic niche or even reiterating off other peoples build is very fun, 1:1 copies are boring.

People are trained by bad games that will let you get too far into it with a shitty build before making it so miserable to play you consider resetting the save file.
Most modern games aren't like that, but it is very common since that's how a fair amount of old games ended up going. And also MMORPGs train people to be like that because resetting skills is usually resource intensive (in-game money or one of those microtransactions).
It's an assurance that the game doesn't need to be min-maxed for the average player just playing the game casually. A beginner asks it because they're clueless or an experienced player can ask to compare notes, experience isn't always mentioned so it's just a word of safety for people trying to look up information. Like a spoiler alert for when dumblesolo dies.

I played elden ring on release as a "pick what you like" build and had a real shit time
halfway through I copied a dex build from the internets and had way more fun since combat wasn't a total ballache anymore

If you want an example: Killing Floor 3's meta is backwards because it's an unintuitive game.
For example the ninja (melee) is better than commando (assault rifle man) at using assault rifles because the ninja's melee weapon-oriented skills apply to all weapons. Also the firebug's vulcan is op because fire resist just suddenly doesn't exist on nearly all the enemies like they have prior.

Games like Path of Exile can have so many stats and moving parts that it isn't immediately obvious which choices actually give you higher dps unless you use a third party tool like Path of Building. Some noob traps would be stacking a specific stat exclusively because a unique item gives increased scaling, like overinvesting strength into a strength stacking build when there is eventually diminishing returns or neglecting other important stats.

A lot of people who name the "best" builds only look at endgame content, when your build is complete. They don't give a fuck whether their minmaxed build makes the earlygame hell. Doubly so in games with some sort of system that rewards staying low level early on (FF6/8/9, KOTOR 1).

Another fun example is KOTOR 2, where the "best" starting class has the hardest start because of its low HP and the endgame is trivial as long as you have any halfdecent build.
