Who would win in a fight? That's a good question considering they're both pretty powerful. I guess Alucard has canonically defeated Dracula and Soma IS basically Dracula, so Alucard?
Game-wise I think SotN has higher highs but lower lows. AoS is definitely the more polished and tightly designed game even if it's in a more humble package.
Character-wise Alucard's design and voice is iconic but Soma has an actual character arc.

Pretty much this. The soul system puts in a lot of fucking work but the castle itself is pretty tightly designed as well. Problem is, it's a GBA game so it's never going to match what was the most deliberately extravagantly styled 2D game to ever exist at its time.
I'm somewhat sad nobody's ever attempted to make a "Aria of Sorrow if it were released in place of Symphony of the Night" because I think that'd be the best game in the genre without a shadow of a doubt.

Having first played SotN fairly recently, AoS > SotN. Inverted Castle sucks balls and the underground area is way too big and has dull music. AoS isn't entirely innocent of this either, but its equivalent isn't as big.
SotN has some funny event rooms though. Like the haunted confessional and the hanging room where the bird makes a nest.

I really didn't like the soul system. The idea of getting abilities from monsters is really cool, but I found in practice it just streamlined a lot of the variety in SotN.
I suppose to some people who thought SotN was bloated that might be a good thing. But I liked how SotN magic is just "knowing", that was cool. Also you didn't have to juggle souls, and they weren't all constrained to mana/magic like they are in Aria, which I found made AoS and DoS to devolve into just spamming warg or whatever and ignoring everything else.

Comes out in the wash but I'd give the slight edge to AoS because I'm nostalgic for it. I didn't play SOTN until I was a bit older but AoS was one of my first castlevania games.

SoTN and the GBA games arent even close mostly because of the GBA's washed out colors and awful sound chip. Also HoD > AoS. HoD is the closest thing to SoTN.

HoD is probably my least favorite Igavania but it takes an idea from SotN like the two castles and iterates on it by making it something you actively cycle between as opposed to clearing one and then the other, and I respect it for that. But I don't know what they were thinking by incorporating literal locked doors in a mold where your abilities are supposed to serve that purpose.

SOTN Alucard's kit is much better than AOS's, with better bosses and level design. AOS has better weapon balance and greater variety, despite removing most of the inputs and the Soul system being just ROD/Inputs with extra steps.

I get that opinion, and I can even agree to an extent. Certainly the menuing is annoying and that's not even something they fixed by Dawn, instead band-aiding it by just letting you 'hot swap'. I like how spells work conceptually, and in general I'm a big proponent of players having tools from the very beginning and learning of them later on so that they can always be utilized by somebody who knows. And I do wish that, not unlike you said, if even it were just Guardian Souls running on an MP bar with Bullet Souls running off hearts, it would alleviate some of the tedium of having to pick or choose. I think that would be an ideal form of the system alongside some fabled quick-select or favorites tab of Souls you could switch between on command. Obviously, on a console with more buttons than just A/B/Start/Select, I'd like to imagine that would be the case (just ignore Dawn).
That said, I think it only works in Symphony because every spell is a Dracula spell. Now that goes a bit for souls as well but hear me out. Contextually, Soma has zero traits of Dracula at the beginning of the game and Alucard has been toiling around since CV3. It makes perfect sense that Alucard comes loaded with a bunch of spells he can fire off that not even Death can take from him at the beginning, while Soma only has whatever he can claw out from the enemies he encounters. From the story standpoint, the spells and souls both make sense in how they are handled and I appreciate how the function in tandem with the plot.

DAWN has made improvements to soul design. Instead of most of them being bullet types or passive, they have made them all kinds of game abilities. There are even souls that use the touch screen.

Symphony's only top tier aspects are the music and visuals. Aria is a much better package, especially in regards to gameplay. Neither are really that difficult, but SotN's (lack of) difficulty is pathetic.

Both are phenomenal, but I personally prefer AoS to SotN. AoS generally has everything SotN has in terms of the variety of equipment, lite RPG mechanics, and mobility unlocks, but the soul system feels like it doubles the content in some ways. Every single enemy having a unique soul was phenomenal as a gimmick. Whether it was a general stat boost, a projectile, an entire unique form, or even changed the way you played entirely (health absorb, drop kicks, extreme speed dashing), it all made for such a unique experience.

Also, I'd argue AoS is much more tight overall. I adore SotN and the upside down/inverted castle, but a lot of the second half of the game feels poorly designed. Tons of areas in the inverted castle are fucking packed with enemies that feel copy pasted rather than properly thought through. A bunch of rooms are outright empty or missing any real reason to explore it as well. Also, since you mostly have all of your mobility tools by that point, you can sometimes feel a bit mindless in how you go through areas since nothing's stopping you or asking you to find some alternative path since you're missing an ability.

SotN generally looks way better, has better music, puzzles, and way more content all around. But I often come away feeling a bit tired by the time I'm done replaying it, whereas AoS always feels like it ends right when I'm satisfied. It's overall way more of a tight experience comparatively.

HoD is an awful game, the castle layout is terrible and is basically hallways with enemies that all die in one hit, tons of bosses that are all forgettable (except the flesh monter thing), and awful progression where your skills are glorified keys that you only use to open up the path to the next zone. And the castle is filled zones that have gates after gates so even exploring and progression feels awful.
CotM is better than the piece of shit of HoD AND it also has the better ost. Awaken alone mogs everything that shit chiptune of HoD produces.

Map is shit, no noteworthy rooms besides shit like rabbit, panther and tsuchinoko's. No fun finds besides whipsword, solais and scythe. No challenge rooms and the clock tower was easy af to travel.
Enemies were boring af, most with an attack animation at most, more recolors, many might as well be static images. Nothing interesting to fight or find.
2 good boss fights (Julius and death), one ok (headhunter), rest shit.
Equipment system was a massive downgrade, weapon wise you get over head! But besides that everything losses all identity besides stats. No special attack, no unique weapons besides the guns, no special attributes or passive besides simple stat boost. No reason to ever use anything but the highest attack of a swing class.
Same with armors, literally just stat+ and jack shit else.
And you have nothing besides 1 accessory slot to spice things up.

What you get in exchange? Bullet souls with many repeats (DOS fixes this), stat up +1,+2,+3. Only guardian souls have anything interesting to offer.

Every castlevania after was significantly better

Aria has the Succubus and Lilith hot tub room with the rubber ducky, the room with a bunch of Ripper enemies hiding in a box, the room with a random Killer Fish lying on the floor, etc. Also lots of humorous interactions, such as making the Red Minotaurs drop their axe.

SotN is by no means the only Igavania with these sorts of quirky details. Aria of Sorrow and every DSvania has tons of these.
