I know you probably won't believe me, but Rebirth is a significant improvement in almost every way and was worth the weird sitting through extended Midgar. Yuffie DLC is also fun.
I hope you give it a shot because, for me, it was Rebirth that made this whole remake project worth it. Amazing game.

There are still side quests and stuff but the pacing is much better because they follow the story all the way up to Aerith's encounter with Sephiroth in Forgotten Capital, which is like more than half of the FF7 narrative.
Most events are either 1 to 1 or otherwise faithful to the original in terms of tone and presentation. The whispers aren't in this game this time, but there continues to be parallel universe shenanigans that don't really impact the story until the finale. Sephiroth being so prominently featured and being the final boss actually makes sense now.
I'm sure someone will rip into me for defending it, it isn't perfect, but it really resonated with me and I was sad to see it seemingly underperform.

when I played ff7 originally I couldn’t get past the elevator robot boss and moved on to other games. I came back to the remake and it’s about as long as where I left off story wise, but since I only played the Midgar portion it felt like a huge upgrade to see the city expanded. I never finished ff7, don’t care about the story, so I don’t care about rebirth or even finishing it.

The OG's characters were very basic, with hints of good characterization and depth (far better than prior entries).
Where OG 7's strength came from was in its villains, since they were far more interesting than villains in past games short of maybe Kefka (not so much the empire).
They're far more realized, and the small reworks have (for the most part) been better, especially with Barret.

Only one I'm still iffy with is Cid at the moment, he potentially might be bad, but I'm waiting on part 3 to fully commit one way or the other on him.

Basically you need to be able to distinguish between imagery as branding, and the total artistic direction of a video game. Remake obviously looks nothing like VII if you put their respective versions of Cloud next to each other. The proportions are different, the colors are different, the level of detail is different, the mannerisms and dialogue are different... but the characters are wearing the same outfit. Your brain may tell you that both are the same because of this shared attribute, but if you put remake Cloud next to Crisis Core Cloud or Advent Children Cloud there's almost no stylistic gap between them. You don't even need these iterations of the character to have matching outfits for the resemblance to be obvious.
