They did their Nintendo thing they do now-a-days. They make a really, REALLY good engine and then just build a small, almost tech demo-like world around it. Mario Odyssey is the outlier here, because they already had Mario's base movement since 1996, they just made it in a new engine and then got to making the levels. Other than that, every game since the Switch era started has been a really, really good engine and a really good gameplay loop, and a lackluster world.
BoTW is really good, but the challenges, maps and the dungeons are lackluster. DK Bananza is really good, but the levels themselves are lackluster and unmemorable (except for the fastfood carnival one, that one kicks ass). Mario Kart World is the first Mario Kart in a good LONG while to actually change the gameplay up, and what do they do? They make a bland uninspiring map with a couple of racetracks thrown in, and you barely spend time on those, you spend time on the lame highways inbetween. Bowser's Fury, which I guess can be excused because it was more along the lines of DLC, was extremely short, and the entire map was just blocks.
