Full plate seems extremely impractical for adventuring. I prefer the classic "ronin look" of just having a guy wearing normal clothes and a sword.

Depends on the plate. You could definitely have plate tier protection in something you could walk and run normally in, and the weight wouldn't matter nearly as much as you'd think because it's distributed over your entire body.

It seems impractical because no one is brave enough to interface with the reality of a knight needing squires, baggage handlers, cooks, stable boys, etc following him around in order to make traipsing about in full plate viable. It is less common a trope in video games but in early TTRPGs it was expected you would have noncombatant NPCs following you around providing various services, either out of obligation (they were your servants or your family's servants), contracts (you are paying them to follow you into horrible wilderness to keep you fed and supplied while you delve the dungeon, typically a steady rate over shares of the haul), or greed (they are vultures that attached themselves to you in the hopes of sharing the loot, or just stealing it later). This is more or less the pattern followed by actual camp followers, which followed armies around.

if you're into that, sure. But that kind of handwavy utility magic feels lame to me when you could instead do something more interesting with it if you are actually going to go out of your way to deal with the logistical aspect of full plate at all. Even then, I'd rather it be something like you're a skeleton with no need to take it off, or just a messy, scraggly freak explicitly because you are doing all that without help. It makes for a more interesting character.

It's a fantasy adventure. Why not play as a knight? Wizards are mentors, archers are allies, necromancers are villains. The knights are the heroes. It's highly likely the game will at some point ask me to slay a dragon and I want to prepare appropriately.

Whenever possible I play as a wizard. Problem is that a lot of the time robes don't look as cool as they should.
Don't play wizards in soulslikes because the combat system isn't interesting that way. You need to be able to plan long ahead to have a wizard class be good because otherwise it's just like using a gun.

I love playing non-humans, ideally not even humanoid at every opportunity, like ayys, felines, dragons/lizards, elementals/golems, machines, etc. Or I play humans exclusively, if there's no other option. Sword chuds are fucking retarded. When people started wearing PLATE ARMOR in the medieval you think people used le zweihander against them? nope they were using POLEARMS. Halberods, Lucerne, very LONG weapons that symbolize their LONG DICKS and they were CRUSHING the plate wearing knights.
If you use a sword you're playing an UNREALISTIC and UNIMMERSIVE game you need to USE A HALBERD OR LUCERNE NOW

Melee is just the most fun and cool.
Melee weapons are fascinating. Heavy armor is fascinating. Melee fighters get to fight up close and personal and crush their enemies with the might of their own muscles. Looting weapons and armor is fun. Melee fighting has a much richer history than magic, starting from animals with claws and fangs, to cavemen with clubs and spears, then metallurgy brought us axes, polearms and maces and those have been refined with more advanced steel types, shapes and martial arts over the centuries.
In almost any action game, melee is always the most fun and high adrenaline playstyle. Especially, if it's a shooter game where melee weapons kill enemies in a single blow.
Just simply flinging spells isn't the same.
Also, thieves/rogues/assassins are retarded in most games because they do not actually use stealth and trickery but are instead shitty melee fighters with leather armor and fucking daggers.
Carry capacity from strength is a really nice bonus.

Always pump up endurance/vitality/constitution for max tanking with strength to follow. I also like creating these fighter chars with relatively high wisdom/intelligence with social skills to boot for those Conan "what's best in life" moments. I also tend to have dexterity/agility be the general the "dump stat" to have this RP clumsy persona and have it reflect mechanically

I'm old enough now to have seen how the average player of DnD has changed over time.
It's to the point where the "generic" human male fighter is no longer generic by sheer virtue of being rarely chosen by anyone. Everyone always has to be some kind of "unique" special race with severe main character syndrome in the most generic backstory ever of trauma and hidden power and great willpower, defying gods or demons, etc. etc. Every single one.
I've been in groups were every single person has chosen some form of edge lord tiefling.

But really, I just like the simple guy in Armor with a Sword. It's an age old heroes story that is so common for a reason. It's a classic.

What can I say? I like the idea of a guy who's got nothing but grit and determination fighting above his weight class. No special snow flake powers, no gods empowering him, just a guy who keeps getting back up over and over again.
That is the coolest shit ever.
Plus, I just like the aesthetics of Knights, Warriors, Vikings, etc. It's cool. Not even just from a looks perspective. The ideas behind them, honor, virtue, no fear in the face of death, a warriors death even. Always the hypest moments in any movie where the basic simply Warrior faces down death heroically.
Boromir as an easy example is remembered fondly for good reason. They're just cool.
