Even though I understand why the game has these hitboxes (it's supposed to be simon says, you're supposed to do a specific reaction to a specific tell and the game has to punish you for choosing the wrong one) I think it would have gotten a LOT of mileage out of simple animation tweaks to sell the punish better.
e.g. the game puts really tall hitboxes on spear thrusts because you're supposed to be taking a punish hit for misreading a thrust as a sweep, but it just looks janky. You'd get the same gameplay balance if there was an additive on the thrust that made the enemy aim upward at you when airborne. Or for the grab in your webm, having rape ape rotate in the air to face you so that it's clearer why he's able to grab you by landing on him and you were getting punished for not using evade i-frames on a grab.
