The direction they chose for Odin was gay from the start, it's a fine idea for a villain, and thematically it does fit, but it offers nothing gameplay wise. Odin is known as the "all knowing", so they made his theme knowledge and manipulation, lore wise that fits, and there is plenty of stuff you can do with it in the story, like manipulating Thor to do his bidding, even though Thor is supposed to be way way stronger than him, but when it comes to a last boss fight, it corners you design wise, there is very little to work with for a boss that "knows everything", Elden Ring also failed in that regard, Gideon, the all knowing, was nothing more than a spam machine.
