The irony is, they massively expanded this in 3.5, but then they continously removed player choice by 5e because retards couldn't cope.

Feats upon lvl up are legitimately exciting and makes me want to lvl up for more than numbers go up

If you want "skill" selection to be a huge part of your character level-ups play a Sorceror, they're excellent. And if we're including BG2 everyone gets HLAs at 3000k exp. Really though, the game has PLENTY of character and party complexity once you get into BG2/TOB. It's only simple in BG1.
