Because adding anything that isn't a bipedal human shaped thing apparently is too fucking complex for today's shitty fucking game developers. The extra effort of modeling, animating and making unique items that non-Humans could use takes away time, money and resources that would be apparently be better spent on making shitty microtransactions. That's why everything companion in BG3 is either an elf or a Humans.
