Fantastic character. It's tricky because he has a very clear purpose in the story and that requires him to lose significance and presence as the game goes on, but if you connect with the narrative and use your memory actively, you can really feel the weight of his character on everything. Many players don't remember Gustave or his overwhelmingly tragic story when they reach the end, it feels like a lifetime away by that point with how much things have changed and the scope of the story has moved. But if you do remember, it makes the ending all the more crushingly difficult, whatever you choose.
Another thing I like about Gustave is that he's a rare good example of a strong man who actually isn't macho or "badass". He's awkward, scrawny, an inventor rather than a fighter, shows real fear and doubt, but he powers through and sacrifices everything to his last breath for what he believes in.
