I think it's a combination of factors that make them so popular, and the biggest three of them are:
1. Gambling (obviously)
2. Pandering to a lonely and horny audience
3. Providing a live community as a live service game (which is, again, pandering to a lonely audience)
And then after spending time and/or money people feel obliged to stay because of FOMO/because they spent money/because ther waifu will miss them etc.

I play Wuthering Waves, and while the main story is dogshit early on and full of lame anime tropes, the action combat is actually a lot of fun, the pretty girls are a nice bonus too. The open world is a standard Botw copy, but I enjoy it for what it is.

It is still a gacha game, you don't treat it as a normal game where you beat it and move on, you have to play a bit each day to grind for stuff, some people dislike this system, I used to as well but started to enjoy the grind, little by little your characters get stronger. The gambling still sucks but there is a pity system at least.

If you're okay with playing a live service Botw clone with DMC combat and cute anime girls, play WuWa or Genshin, the rest of the games I'm not familiar with it.

Just started playing Wuthering Waves, and honestly it shits on all tripple A games since the late 2010s. It's showed the potential of mobile games to compete with console/PC, gacha is no longer just png collectors or boring clones of famous games that we remembered it being. For me the appeal is the time investment. I like playing as a f2p and gradually building up my account over time logging in every day to do my dailies and gradually increase my account power to engage with all the end game content.
