using a combination of these things works. A light armor fighter with steed sign and atheltics in major skills will go quite fast right at level 1. The downside to light armor are that they dont have as high enchanting value, which is only important for minmaxing autists, same for athletics, supposedly it can make intentional leveling attributes harder, but between morrowind,oblivion and skyrim, morrowind is probably the least important to minmax your leveling experience.

Not really to that extend. Just pay trainers for those 10 level in misc skills at the start. You don't have to start with 75 or 100 endurance just to feel good. If you really want to, just dump a stat you will not use like Intelligence with the Bittercup.
