Why is Castlevania a film? The title screens of 2 and 3 have a film scroll motif and the first game has fake end credits with "actors".
It's just a game where some guy beats a bunch of monsters in a castle and then a big bad. Why the film, how does it relate to that?

None of them are easy except the metroidvanias starting with Symphony of the Night and that's rather different. You'd think they made more exactly like the NES game since it's so popular but no. However, the 16-bit classic style Castlevanias are slightly easier than the NES games and also good. Try Bloodlines, Super Castlevania IV and Rondo of Blood.

Funnily enough, Castlevania 2, arguably. You'll maybe need a guide for figuring out what to do and when, but that aside, I'd say it's easier than its NES brethren, at least. There are times where enemies may more easily whap you around, but Simon can get to being hella resilient, not to mention laurels give you on-demand temporary invincibility.

After Simon's Quest, IV isn't totally a walk in the park, but jump directional control and 8-way whipping loosens things up and is a sort of retelling of 1 on top of that. Rondo of Blood arguably isn't that bad depending on who you ask but I don't know, that game's first stage throws skeleton katanamen at you. Symphony of The Night is a totally different thing from CV1, but it is easy as all hell, if it helps. Most of the metroidvanias afterwards are pretty easy, as well, save for Circle of The Moon and Order of Ecclesia, but Portrait of Ruin is a step below those two while still being a step up from the others.

You might try Rondo. It's one of the easier classic entries in general, and Maria functions as a sort of easy mode once you unlock her. That said, you would likely find the first game becomes manageable surprisingly quickly if you put much time in to it.

the problem is moreso the fact that the levels, enemies, and manors are terrible, and figuring out where to go is cryptic and pretty much requires outside help or significant amounts of trial and error.
the more non-linear RPG formula can work, it's just that Simon's Quest failed. one game that did it right is Infernax, which managed to keep the 5 dungeon/semi-open world formula but with better enemy and level design, boss battles in each dungeon, and less cryptic puzzles.
part of me wonders if the game wouldn't have benefited significantly from a Zelda II style overworld with instanced dungeons and enemy encounters. that would cut down on backtracking and facilitate exploration while allowing the manors to feel more like Castlevania 1 levels.

The first one on NES is pretty easy, but if you need something easier, CV4 is probably your best bet. Aside from a couple bullshit moments it's not nearly as hard as the rest of the classic games.
