Zenno Rob Roy shows us a book one time about the Mongol expansions and instead of horses they had hordes of Umas ready to fight and several historical figures be it symbolic or living are Umas as well so its safe to assume famous figures in war are Umas now, like Napoleon.
The JP version even made an uma out of a horse that used to race but is now a tourist ambassador of a town in Hokkaido and in game she is an NPC with the same role and even spits out lots of trivia of that city.
