it's a plot point in both the game's first season and the comics/show that a dude with a bite gets captured by cannibals and turns them into zombies on accident

when you're in the barn the brothers are talking and one says that their mother told him to pick one of you to keep and kill the rest (presumably for food, and I guess clementine is the clear pick for survivor as she's easy to groom into not caring about eating people)
they were just juicing lee's group for help around the farm and with bandits until they had no option but to go mask off and turn them from labor to food because they found out, it was a prioritization of how to utilize them... they weren't going more than a couple more days until the family tried to set up a more advantageous situation to bushwhack them

I've only seen one game where this was viable and it was an entire faction that built themselves around the concept. It only really worked because the original pathogen was passed over from a bad batch of turnips. You can buy truck loads of infected meat from them and you won't suffer any real consequences outside of morale penalties.
