depends on the game and how much I've played it. a game I've never played before? all audio stays on. something I've played a bunch of? I'll turn the audio down to listen to something else, be it youtube/music. I love Morrowind and the OST, but having a few hundred hours into the game has soured me to it in game

Only on certain games where I just want to zone out, or I've beaten it so many times that I pick a new soundtrack to play with
