Now what i want to know is, how come Minecraft never set its world generation to expand infinitely downward? (and upwards, with potential floating islands.) There are so many interesting biomes you could create in journeying deeper, including connecting the nether and end to the main world.

World generation can't extend infinitely upward and downward because chunks include an entire vertical slice of the world. An infinitely-tall chunk would require infinitely-large memory. >What if chunks were stacked along the vertical axis as well instead of being infinitely tall?
This isn't possible because there's no way to determine whether the sky is visible without knowledge of everything that's above you.

Cuz Minecraft devs are lazy and incompetent.
They have billions of dollars and 1000 staff behind them and the best they manage is an update every 18 months that recolours a few blocks and adds back 1 creature we had in a modpack 15 years ago.
