I dont think remakes is something nintendo would do. It would sully the OG game.
Plus what could they really do. Expand hyrule field and make each of the towns larger, add more side characters and quests. That is about it.
Redesigning or adding new dungeons will fuck the game too.
I could see them doing a remaster in the new engine though.

there were a bunch of ideas they couldn't do on the n64, now they have a chance to do them

They could add a new item and add/modify some rooms in other dungeons to let you use it, or the lazy route would be repurposing an existing optional item like Bombchus. A remake on the scope of FFVIIR wouldn't need to keep the exact same dungeon layouts and item progression anyway. I'd be more interested if they tried something ambitious even at the cost of changing a bunch of stuff about the original. I've played it and 3D so many times I don't feel the need of a mere graphical update, plus I think those early 3D game environments were designed in an artificial way that wouldn't translate too well to current graphics. Like I love the style the Tomb Raider remasters went for, but the detailed models and texture on that boxy geometry does get silly at times.

Oh, you mean the most underutilized locations and situations across the game? Ones clearly added extremely late development?

Either remove them, or improve them. Imagine being actually satisfied with the item implementation in OOT.
