There's way more to it than that. Diablerie involves more than drinking another vampire's blood, but continuing to drain them to the point their soul is consumed as well. A vampire without blood can be revived, but diablerie obliterates the spirit, meaning there's not even a chance at the afterlife, which is a major reason it's such a taboo - the very idea of it happening to a supposedly immortal being scares them shitless.

There's more going there than just the facial animation. That's actually not really that impressive anymore as far as end product goes and hasn't been for years. There's also a lot of full body animation going there that is giving the character a lot of life. There's actually a mod for Skyrim that makes it so NPCs do full body animations during dialogue and it makes an amazing difference even if it does start to get a little repetitive. There's also NPCs in Bloodlines that do just stand there and talk at the character. That looks equally as shit as Bethesda's games. Troika didn't put equally amount of effort into animating all the NPCs in the game.
