If you're willing to put up with sub-par graphics and a bit of jank, Legends Arceus is genuinely good at evoking the feeling of exploring the wilderness with your pokemon. You use pokemon to jump over gaps, climb cliffs, fly around, etc. and really the only goal is to catch a bunch of pokemon to research them. The story is whatever but the setting is decent. It really comes down to how much you personally think it's cool to see a bunch of pokemon swimming in a river or napping under a tree and then figuring out how to approach them without them running off or attacking you (literally attacking you, you can get knocked out by wild pokemon and have to bring out your own to intercede).
Scarlet/Violet is more of a traditional pokemon structure and suffers a bit as a result, but still maintains the relative freedom of movement and has a much more open-world structure than previous mainline games along with having pokemon persist in the overworld rather than be random encounters. I liked it less than Arceus but it was at least trying shit.
