Why do gamers claim to hate bloated, cinematic games, but also turn their nose at a game with deep, complex arcade-style gameplay? They then proceed to waste hundreds of mindless hours in some massive skinner-box open world AAA slop with the depth of a puddle.

The actual reason is that most arcade games have to be emulated which is a major hurdle for 80% of gamers. If they can't buy it on steam or download it from psn they're not touching it.

People enjoy some story and "down time" with their games. Not all games have to satisfy the same itch, there's room for both arcade games and Animal Crossing.
