For 1, remakes a dlc that was absent on PS3/Legendary because they lost the source files. I personally don't like it because it's poorly-designed challenges made by a team outside of Bioware that forces your Shep to act like a retard in order to finish the story, but it's there if you want it.

Restores the original look of Eden Prime and Feros.

Uses concept art to restore cut content where Saren's appearance was going to change over the course of the game, kinda neat.
>Diversification Project
For 1 and I think 3, adds a shitload more npcs and other ambient environmental shit in an attempt to be more lore-friendly and consistent in-between games, I haven't played enough to fully recommend it but worth checking out.

Adds way more content to the endgame of 3, I haven't played it yet but heard very good things.

Makes ME1 a bit easier to navigate.

Texture overhaul focusing on faces. I actually hate the way this looks but loads of people seem to love it.

Series of mods adding new enemy types and shit to 3. Don't know enough to fully recommend but looks neat.
>Appearance Modification Menu
Allows more character customization, particularly for 1. I don't really care about that sort of thing but there's a lot there if you want.
Modding is a bit complex because you have to use two separate programs: ME3Tweaks Mod Manager for content mods, and MassEffectModder for texture mods. Install content mods first, then texture mods. Don't alter mods after textures are done. There's a google doc out there that explains more.
