They were actually good once, but their gameplay systems have and outer, obvious shell, with a hidden depth you don't see unless you investigate or play experimentally. The premise was also really good. There's an excelent formula there, both in terms of game design, the tenets of the Creed (which in the old games tied directly into the gameplay) and the lore of the old games which set up possibilites for stories in all sorts of settings (picrel) thought they retconned a lot of it later. I said "heard" not "played a game about", that being said, there are even examples of that, which are the 2 AC games I mentioned, on both of which you play as African slaves who were part of the trans atlantic slave trade. You also have plenty of games that play with the same kinds of oppression themes, and as far as murdering kkk members and slave owners go, you have RDR2, which played heavily into that kind of thing (and while I'm not about revenge porn and proto communism, they pulled of some of the retribution themes well, insofar as it was engaging, which ubisoft doesn't do for me).
