Its very interesting if you do a little general knowledge research into how and variants are made.
The tl:dr of it is that there are workers, which are all women, and drones which are all men and the workers choose what ants the colony needs and feeds the larvae appropriately to get them to mutate into what they need, including a queen, so if a colonies queen is killed the workers can make another.
Its all about how much royal jelly they are fed and for how long they are fed it.

iirc, there's only one overseer in each early wave so you can just snipe it. and in later waves, there's a way to manipulate them.

There's also a way to complete the mission faster. Some Nidus Worms at a specific location spawn Zerglings that, when killed, count toward the kill count. You can just farm them to complete the objective earlier than usual.

There's a way to stay alive forever by not killing the Overseers, you can let them flood the map until they hit the game engine's unit cap, which means nothing else can be spawned.
