I'm still pissed that classism and partisan brainrot ruined restaurant steak. Somewhere in the 2010s, everyone decided that anything other than rare steak is for classless MAGA rednecks. I've always been a medium rare guy, but ever since that happened, if I ordered that way I'd get raw, cold, and chewy meat in the center because the rarer it is, the classier it is. Even ordering medium, it's a coinflip, I think these chefs are browbeaten into underestimating doneness because they're terrified of getting it too close to actual medium
