Because the current AAA business model relies on selling an absurd amount of overpriced DLC for every game. Can't sell DLC to people who drop a game 5 hours in.
Also, given how devtimes have ballooned for AAA games, if people jump ship away from your latest game, you won't have a new game to draw them back with for another three to five years.

Does "finishing" open world slop really matter that much? If that's a problem then they would make games more dense, tighter, meaningful experiences, but we all know they're not. It just shows me that they're learning. Realizing oh it's only going to be more of this over and over until the end

Yeah, everything wants to be a forever game now, even shit that really just a single player game still wants to sell you microtransactions, battle passes and DLCs that have better margins than the base game. Also serve you ads and shit.
That DLC are not as good value was always true, and it was a controversial invention from the start but now studios assume they will sell those to make their money back.

Yes theres initial hooks and it was fun but something interupts us. And trying to get back into it is hard because we feel we've lost a lot of mechanical skill, lost focus on our ingame goals. I find myself gravitating back to my regular games to chill and take a break from games I do want to complete. For me ive got health problems as well which makes it harder to focus. But very often I will go back and finish it. For games like dark souls i might keep my original save file but start a new save until I feel like ive remembered mechanics again. Then I go back to my original save.
