Made an 'evil' character and got him to the top of the 'crime' career
Then I discovered that the handiness skill I'd had to max out on the way let him craft wooden bath-tubs that could each sell for more than a day's income from his job, and he could crank out one an hour with all the right buffs. Seems absurd

You can't be at all familiar with the series if you're asking that. Sims 2 had a complete redo of style from the original. Sims 3 made the incredibly ambitious decision to expand the simulation to the entire neighbourhood so you weren't bound to just your sims's house when playing. It's just Sims 4 that decided to dial back on the ambition the third game had.

The last two expansions seem like shit I either don't want or already bought and sometimes both, and every time they patch the game they break my mods so I can't get a good save going.

The only way to really counter balance this is to constantly upgrade your in game house starting from nothing with only one adult sim and several (immediately breaking household size limits) teenage or younger sims that have to be the adult's dependents. Basically put yourself in super debt to counterbalance your midas touch.
