Fire Emblem Awakening (3DS) is when the series started becoming a dating sim. The games following it, both FE Fates (3DS) and the Switch games, involved a lot more on story and character interactions than on an excuse to play the maps. I'm guessing that's what you mean, so everything pre-3DS is what you're looking for.
You've got three games on GBA (Fire Emblem, FE: Sacred Stones, and an untranslated JP-only game that came out before the other two) along with one game on Gamecube and its direct sequel on Wii. The GBA games and the Gamecube game are pretty good. I didn't play the Wii game so I'll let others comment on it.
There's also Shadow Dragon, a remake of FE1 on DS, and a remake of FE2 on 3DS, if you don't want to play the originals of those games.
