Speed and Accelerate hardly do anything.
Power determines if you lose rings when you bump into someone.
but power VEHICLES have less hitstun when hit by an item.
Handling is self explanatory and you can tell how important it is.
BOOST determines how fast you can charge your drifts and how fast you can go from boosts.
The boost stat is a little OP... They should probably make the other stats a little more important.

Knuckles, in particular, is an interesting case, because the English version of his character has been all over the place over the years, both in terms of personality and how his dialogue is translated or adapted.
In Japanese, Knuckles has consistently been portrayed as a rough-around-the-edges loner: hot-headed, naive, and good-hearted to a fault, but that can also be calm and composed when the situation calls for it (Honestly, I can’t help but sense a bit of Lancer in him... though that might just be a natural result of both being voiced by Nobutoshi Canna).

Meanwhile, in English, during the Adventure era, his characterization was mostly a 1:1 match with the Japanese version, even down to his voice, which felt closer to Canna’s delivery. But as time went on, they started leaning more heavily into either his aggressive side or his goofy side.
By the time Sonic Boom came around, Boom Knuckles’ exaggerated stupidity ended up bleeding into mainline game Knuckles, and that tone stuck around for a while. These days, the stupidity has been toned down a bit, but it's still present.
