DS9 was a bad fit for syndication. TV stations would air episodes however the fuck they liked in random order which made a serialized show nonsensical. Both DS9 and B5 were pioneers in the long-form TV show storytelling, but they were years too early.

Unreal Engine 1 was a pretty good alternative to ID Tech 3 back in the day. Best features of UE1 was the ability to support different graphics API's (DX6, DX7, DX8.1, OpenGL) and its' ability to do modular music. Not a lot games that licensed the engine outside of Deus Ex, RUNE, a couple Star Trek games, and well technically Duke Nukem Forever,... which launched with a UE1 engine license, but the engine itself was heavily modified. The Voyage Elite Forces games use ID Tech 3.

Not sure what you mean. Jeri Ryan's coom brained ex-husband Senator Jack Ryan forced her to participate in sex acts in some weird BDSM club, which led to their divorce and his disgraceful exit from office. Obama took his vacant seat, and from there quickly ascended to the presidency. Trump's success in American politics was largely a result of backlash to the Obama administration. Therefore, Seven's boobs defined twenty years of global politics. Also likely reshaped human history. The mammaries of the millennium.

My headcannon is that Ben Sisko, enlightened 24th century man, living in an era where racism hasn't been a problem for several hundred years. When lincoln apologizes for calling uhura a nigger, she's confused about why she's supposed to be offended.
But sisko had his consciousness inserted into the life of a black guy in post-war new york.
For an innocent mind being put in that situation and having a lifetime of memories of it implanted into his head could absolutely make him a little bit sensitive about it.
And Brooks' objection isn't out of line, trek can be incredibly accepting and aspirational, but sanitizing the past like that can be counter productive.

I don't think the CG itself was "bad" but it had some bad compositing that made it look like an FMV on a 1990's television set piped through an analog transmission across copper coaxial cable.
Watching the remaster that came out relatively recently, its not terrible CG, and they do their best to use it sparingly or as backdrops.
The models are fine, sometimes they're great even (the station, some of the ships), what shows its age are the low-res textures.

Both DS9 and Voyager expect you to have watched TNG as TNG is the show that establishes the technology and politics of the 24th century. It's also one of the greatest TV shows ever produced so if you are interested in that era of Trek you really should just start with TNG. If you're that worried about the early seasons you could watch Encounter at Farpoint in S1. Measure of a Man and Q Who in S2, and then just start on S3.

Just watch them in release order you fucking nigger, some TNG characters become main characters in DS9. VOY doesn't do those cameos that often but they happen every once in a blue moon. TOS is the only thing that you can conceivably keep for later. It also depends on how much you can enjoy 60s TV.
As for ENT, it depends on how much faith of the heart you have. It's a prequel to the whole franchise. I personally really like it but others don't. You won't see character cameos from the other shows.

For trying to be carried by characters they had very little character development going on.
Paris calmed down right from the get-go so much that any time he tried to act as rebellious badboy again it looked like an early bout of midlife crisis. Belanna and Seven simply smoothed down their worst bitchy edges a bit. The Doctor was really the only developing crew-member on the ship.

They had the EMH already, it was flexible enough to do the work and it could even use existing tools to do it. They'd have to do years, maybe decades, of work to make a purpose-specific miner hologram.
The idea of holograms is kind of novel but it really gets out of hand if you think about too much. By the 25th century your ships would probably be 98% holographic (not necessarily the crew but for sure at least terminals and furniture) and you'd only have physical terminals and hardware as a failsafe backup. Terminals are already basically 100% configurable but you have to be there standing at it.
There was also that TNG episode with the exocomps that replicated tools as needed, but they had to be swept under the rug because they were sapient.

Only tangibly related, but one of the things I like about SNW is that it doesn't waffle around the fact the foundations of the setting are rooted in the wake of the Third World War where people solved the world's problems by killing a bunch of other people standing in the way of progress... And that's condemned as a fail-state for everyone involved.
Maybe it's a bit of accidental pathos, but it felt like the time-travel episodes were challenging the audience of the idea that Star Trek's back story was the only way to get to Star Trek's premise, in a way less in line with braindead nu-Trek and closer to an earlier TNG episode.
