You can easily draw a longsword from a back scabbard by just holding the thing with your other hand, just like in the in game animation being shown. There are also designs for purpose made back scabbards where you can slide it out with one hand even easier, though none of those are explicitly historical.

It's not impossible if the scabbard has a notch in the side to allow the blade in and out. Just make the pommel snugly fit in a sort of grip lock against the top of the scabbard and it'd work.

its not impossible to sheath/unsheath a sword of the master sword's length if its on your back; this is a complete myth that anyone who has ever tried to do it with can tell you

the sheath isnt stuck in that one diagonal position, it has some wiggle to the sides specifically to allow the sword to be drawn

historically speaking, fighters would wear weapons at their hips during battles so they can be easily drawn or stowed
but during long marches and traveling (which is what an army would be doing 95% of the time), weapons are easier to carry while strapped to your back, since it centers the weight of the weapon. thus, the imagery of the weapon on back was born
