Souls bosses, especially Elden Ring bosses, never seem to be that interesting to me. No one ever talks about how the fight is interesting and when they try to, it's always these side-skirting remarks like, "It FEELS like a dance," or something about the rhythm, or that its really heckin hard because they died 20 times. wow, I died 20 times against draugr overlord in skyrim dungeon #251, i guess that makes it good all of a sudden?
I got about 150 hours in Elden Ring, only beat it once. the other playthrough was me getting to Mohg's Bloody Palace without Varre and then lost all reason to keep playing once I did get there. I can't remember any of the bosses in Elden Ring, none of them really stood out to me. I guess its because a lot of them ending up feeling the same, that even if they do have different animations, I'm still reacting the same way and a lot of the times its no different from fighting a regular enemy. Bosses in the earlier entries seemed to be a bit more intimate, like Capra demon, as boring as the fight was, its arena still had character and Taurus Demon as well with the tower behind you for plunging attacks or if you waited long enough, he'd jump up there with you. The Looking Glass Knight would summon a player into the boss fight, Old Hero who could only hear you and would blindly swing if you stood still, wore no boots or the thief's ring. It gave the impression that more was going on in the fight.
In MH, the monsters move freely to various zones, you can cut off their tail, they fly in the air and you can bring them down with the environment or a flashbomb which gave you time for yourself, they get more aggressive, you can set traps and have the monsters damage themselves by using the area to your advantage. No, i'm not saying MH is perfect, I'm just saying they had more to them.
