Mint is about as idiot-proof as Linux gets. For some people, it's not enough. OP will try a more advanced distro, break everything, and then go crawling back to Windows. He could use his new AMD GPU on Mint, but he doesn't want to take a few minutes time to understand how. He is firmly in the Windows demographic by his own choosing.

All OP had to do was update his kernel and he would have no issues. Mint has an update manager just for this, it has a GUI and is as simple as it gets. You just run the updater and select the new kernel.

Mint is recommended for newbies because it's a very stable, fixed release distro that looks similar to Windows. Rolling release distros require more attention than the average person who just wants to load into the OS and play video games is likely willing to give.

It does just work. You have to update it just like any other OS to get it to work with new hardware. OP thought he could just not update and the OS would magically recognise new hardware, then got frustrated when it didn't.
