I think gamecube is always the best one to go with. WiiU is more convenient and has more QOL but butchers a lot of the charm by changing the lighting so much. The swiftsail can be modded into the gamecube version if you need it.

GC version has better graphics and a lot of the QoL changes for the Wii U go too far in changing the gamefeel without meaningfully lowering the tedium (i.e. a sail that automatically changes the wind for you, so you never tack against a headwind or have to think about when and where you'll move the wind). Either's fine though, it's not like TP where Wii U gets an entire additional equipment slot.
It looks nothing like the original and thre should be an option to turn it off bur I like the HD version lighting. It's like a really bright summer day early in the morning
