Essentially, skyboxes let devs "cheat" because they could directly insert art into a game. Whereas if something was part of the game world, it would have to be modeled, etc. You don't really see it anymore because open world has become the norm, so everything can be reached, and processing power has caught up so any cool stuff can be inserted into the game proper and interacted with. The disconnect you're having is because these far-off objects implied scale, but now we have this scale as minus limitations like view distance or poor LoD rendering

LotRO altered their terrain generation code and accidentally created an enormous boulder in the middle of a road. Most people discovered it because it fucked with fast travel and horses couldn't path around it

For awhile it was this extremely bizarre and unexplainable thing, but was juuuuust intentional enough that people wondered if it part of some secret. Despite being so big people eventually found a long way to jump / clip / climb it, lending more credence to the idea that there was *something* there that people couldn't quite figure out

This was only a few years ago but it felt so much like something you'd see in the late 90s or early 00s

I don't know how it become a virtue in games to be able to reach anything, or interact with anything. One of the most enjoyable parts of games, and maybe all art, is the feeling of depth, of seeing things in the distance. Not being able to go there is what increased the feeling of wonder.
