A maze is a medley of twisting paths that may not even lead to to the exit. Dead ends, endless loops, and outright wrong ways are to be expected.

True, the Minotaur usually was not depicted wielding any weapons in Ancient Greek art, but the Minotaur and the axe are references to the myth of Thesseus and ancient Minoan civilization (proto-greek, circa. 3200 - 1500 BCE).

Depictions of bulls are widespread in Minoan frescoes and there is even an ancient drinking vessel having the shape of a bull's head. That animal seems to have some kind of ritualistic meaning for the people of Crete in the Minoan period (coming of age, fertility etc.).

The axe - usually the a double-bit axe - is called "labrys" and some of these had been found on Crete, dating back to that period.

Now you must have heard about the labyrinth, which Thesseus wandered to kill the Minotaur, right? One interpretation of that name is derived from "labrys" and thus the place can the called "House of axes".

Another funny thing: The Palace had been completely excavated and it is a place with mulitple dozen rooms of various dimensions and it looks very confusing, like a labyrinth.

I would have used the fucking adult swim head explosion GIF for that explanation, but I don't have it and I don't even care.

Always completely forget this due to how they are depicted in video games but it's true.
In general minotaurs in video games and TTRPGs are far removed from the original myth that they are not even encouneter in labyrinths and mazes anymore 90% of the time.Going after the real myth, there would be a single minotaur guarding a huge labyrinth as a unique boss.
ADOM had one minotaur guarding a maze with valuable treasure with a huge unique axe but even there minotaurs were a common species and he was just the leader of them. Dwarf Fortress also has mintoaur mazes guarded by a single minotaur but again they are a species and there are many minotaurs. Barony has the most accurate minotaur because, while it is the final bosses "pet", it is unique and guards a maze, which in this case is the dungeon you spend the entire game in.

Minotaurs are generally cooler than ogres because they have horns, fluff, digitigrade legs and a tail. I would also imagine a minotaur to be faster than an ogre and maybe more intelligent.
However ogres have shrek and better weapons. Also they make more sense as player characters because they are a species made up of many individuals while the minotaur is one unique individual and doesn't really leave his labyrinth.
Meanwhile trolls are kinda ogres but lamer and giants are too large to fit into dungeons, castles and houses not built by other giants.

The Greeks, who settled after the Minoans probably discovered a lot of those things left behind. They could not establish a causal route and thus they had to come up with myths, oral tradition or derivations from other parts of the Hellenosphere.

Some things gotta stay predictable and boring, especially after so many years of gaming. The sword is middle of the road most common weapon ever in fantasy vidya, people expect it to be that. Just as they expect shotguns to behave in a certain way.
Some things get a bit of a wiggle room, but you can't change common tropes without convincing explanation why you are mixing it up. It's a design language thing too. Similar to exploding barrels being always red. Don't expect players just nod and do what you want them to do because it seems logical or fun to you.
