The bosses being straight combat encounters is what makes them good.
There's no bullshit or trickery or gimmicks getting in the way of you and some ancient hero going to town on each other. Even the dragon fight was actually good for once, because Bayle let you hit his head instead of making you wack his ankles all night.
Being linear isn't a flaw, when the path it takes you up and down is very entertaining.
Anor Londo is almost totally linear and its great. Same with Lothric. In fact, the vast majority of Souls dungeons are basically linear when you're inside them.
Also, the hidden parkour path through Enir Ilim to get the Euporia is probably the best Easter Egg puzzle From has done so far.
The Shadow Keep is worth more than the sum of its parts.
Between having different entrances, different exits, and the great verticality, it comes together to be worth more than if it was just focused on only leading to Messmer alone. Instead it feels like an axis that the world rotates around and a fortress placed exactly where it should be to rule the landscape.
