Just pick a game and play, shoot nowadays you have a bunch of collections, including for a bunch of the classics, the Gameboy Advance trio, and the DS games. Sony has Rondo of Blood + Symphony of The Night. You also got 3D games spanning multiple consoles and companies.

Honestly? I would say that it kind of doesn’t matter. Not that there isn’t an overall story or anything, but it sort of doesn’t matter unless you want to avoid being spoiled by a sequel game or something, simply enjoy the Halloween monster ride for what it is. Maybe look up gameplay vids to home in on the stuff that ends up interesting you the most. The only catch I see to it is that the franchise has gone through some massive changes in its history, and even then, the games within certain “groups” can prioritize things so differently from each other.
If I had to answer the (made up) question, though? I’d say something like Castlevania 1 or 4, maybe SoTN, he’ll maybe even the gba/DS games if they look that cool to you. I just think the first three give a good enough idea of the franchise while not being super overbearing, like SoTN is super easy but is also the start of an era for CV, 4 is accessible as hell while just being so cool, and 1 is, well, the first game, but it’s also real tough but fair in a way that’ll ease you in unlike, say, 3 or Chronicles, pretty much the simple foundation of every game after it that doesn’t go too far into being unfair with its ideas.
