If I could amend this post, I would say this.

The mind (story) died with Desmond. The soul (charm, characters, music, etc) died with Black Flag. The body (gameplay) died with Unity.

I stopped after 2. I'd play the other Ezio games and maybe AC3 and AC Black Flag since I always see those praised but I don't know how people stuck around with the series as long as they have.
