8's music is no different from the rest in terms of how beautiful it is, and it shares the problem of the rest of the series: there's only one song per context - so 1 song for battle, 1 song for exploration, 1 song for town, 1 song for boss, which gets kinda dull fast.

DQ9 is fucking awful.
Its entire gimmick is contingent on you being a 2009 Tokyoite surrounded by 100,000 other people playing it at the same time.
DQ9 solo is a game with no story, terrible pacing, a fucked up class system (which is largely responsible for the pacing), an MMO-esque drop system where you never see 90% of items in the game, and easily the worst implementation of non-random battles any RPG has ever had, where you literally still have random battles but with 1/3 of the enemy diversity.
Calling DQ9 better than 6, 7, or 8 is fucking crazy.

DQ3 is my favorite, I think. The game doesn't hold your hand, it gives you the freedom to explore the world relatively early on, it gives you the freedom to create your party, etc. I think DQ3 is the closest to what you would expect from a traditional RPG.
I find it funny that in this infamous open-world trend in every game, even Mario fucking Kart is open-world nowadays, the only genre that really benefits from this, RPG, has gone in the opposite direction (at least in Japan), trapping players in completely linear quests.
DQ11, for example, is extremely linear, and the game only really opens up after you've basically finished it and started the second act, but by then there's no longer any sense of exploration and discovery because you've already had your hand guided through 85% of that world.

11s turn based combat is the worst in the series.
In every other game I've played you pick your entire parties actions at the same time, and then your and the enemy turn plays out.
In 11 you pick individual actions on that characters turn. Enemies almost never catch you off guard.
It's boring. They had to add increased difficulty modes to make it more engaging.

There's no perfect version of DQ8 that has the PS2 visuals with the bonus endings and content of the 3DS version.

Modders have brought some of the visual flair from the original PC version of DQXI to the definitive edition but it's no where near complete.

You don't know what their turn order is, you don't know when the boss will go.
That's why Agility was always the most important stat in the other games, because you could boost your likelihood to get your turn faster.

I've never really enjoyed job system in turn-based JRPGs. I much prefer just having one set of skills per character like in 8 and 11

Its literally the head of DQ coming up with it, the guy that's always been the head of DQ.
The changes are good anyways, I&II have already gotten a simple facelift (and balance adjustments) three times, it is genuinely time to do something different with them.
