The problem with Amy, and Ian Flynn, is the conflict that the Sonic franchise wants to be both an "episodic, never evolving static canon" and also a "more mature series that tells a story that advances the plot".

However, there is a lot to unpack so you can't just jump to the obvious observation that Amy chasing after Sonic is meant to be a gag like Lucy with the football, if she ever started dating Sonic the premise would be ruined.

It starts with Sonic being a series for boys, and the fact it should only star male characters. Female characters only work as side characters, and the endless attempts forcing strong female women as leads on par with Sonic, Tails, Knuckles, Shadow have all been massive failures. Its like trying to make a girl as important as Goku, its stupid.

But Ian Flynn is a liberal, and philosophically he wants to make grrlboss characters that are equal to the male characters, and being attracted to males is seen as not feminist somehow. So he turns Sally into a lesbian in the Archie reboot, then turns turns Amy into a strong independent woman in IDW, and he has to force that into the games too.

There is also the issue that predates Flynn's writing, that Sonic characters will learn important lessons and have character arcs (Sonic Adventure) and then immediately forget and regress after we're told they've grown wiser, which is tiresome and annoying to the audience.
Amy constantly chasing after Sonic is a problem here because too many games have had her learn to be independent and whatever, so there isn't much else to do with her character. Since her appeal to the audience is fundamentally limited to her being interested in Sonic. Making her Sally Acorn in personality, like in IDW, didn't help her appeal at all.

And then there is the fundamental problem that this gag started when the official canon was Sonic was 16 and Amy was almost half his age. Its meant to be cute that a precocious child wants to be Sonic's boyfriend.

Can't ruin what was never particularly good to begin with. Her only real decent appearance as a character was SA1. Before that she was barely a character, after that she was an annoying one-note character. Then since 2010, she's back to pretty much being a nothing character.

I want Amy to return to being an unhinged schizoid like she was depicted as in Sonic Battle. She was hilarious in that game.

Amy is at the very least going in a new direction at the end of sonic frontiers, where she states she wants to discover herself and go on a journey to spread her love instead of stay as she was. The whole cast really gets an opportunity to change after that game.
