Adi Shankar, the initial showrunner of the Castlevania thing on Netflix and the retardo with Devil May Cry afterwards, basically made a whole complaint thing a good few years ago complaining about Apu being an Indian stereotype, though for a minor bit of devil's advocate he was also not wanting the character to get sacked, just "improved". The complaints got traction, a vocal minority pissed and moaned, and Apu got phased out of the series instead while people harassed the voice actor. No recast, so the character's basically retired without any fanfare.

Honestly, Simpsons has been mainstream for decades now. The longest-living animated series ever, one of the longer-living television series out there mostly bested by soap operas like General Hospital, and by the time of the movie it had a cultural zeitgeist nothing else has ever managed to match besides, at best, the peak of the Marvel Cinematic Universe. If anything this is just Old Yeller past its prime, and no one has the courage to kill the merchandising power it still has by putting it out of its misery.

It's funny because this directly led to them recasting black characters like Carl and Hibbert, but instead of recasting Apu, they just phased him out. I guess the real problem is that Apu still displays a lot of Indian stereotypes regardless of his voice, and you'd basically need to entirely rework the character from scratch to fix it.

He does still appear in background crowd scenes, but he hasn't had a single speaking role in about 10 years now.
