Because they don't. One is a turn based RPG with it's own ruleset, another one is a party based, real time with pause CRPG that is based on AD&D second edition, and the other game is a full real time action looter. They're radically different games. It's like trying to compare X-com with secret of monkey island. It's absurd.
It's obvious that you dislike the classic games because you don't enjoy turn based RPGs. Just say that instead of making ridiculous comparisons that make no sense. Those three games are only really comparable graphically and I'll admit that Fallout 2 looked dated at the time compared to Baldur's Gate and even Diablo 1. However, they were enjoyable to play. They didn't feel "slow and janky" at the time. I remember liking the UI at the time, too. That aged less gracefully especially the inventory.
