Cause you got two segments, which together make up 1,5-2 hours, a standard lenght for a Telltale Episode. This game was probably originally made with 4 episodes, but that doesn't sound good to market, even Telltale usually had 5 episodes per season (with ep.4 being the filler). So they just split each episode into two, and boom - now they can say there are 8 episodes, which sounds like a better deal to buy, when you don't know just how long they are.

The game fucking STRUGGLED to load up the donuts you chose on your table that Invisigal destroyed. Rewatch that scene, there is literal cut with a distinct sound where one cutscene cuts away to show the donuts YOU chose on your keyboard. They couldn't even bother to just render three separate cutscenes for three donuts, they just cut the scene sloppily and put in one of three scenes.
